  • 1 Zucchini (around 200g), medium-sized.
  • 1 Finely Chopped Fresh Onion.
  • 1 Pressed Garlic Clove.
  • 50g Grated Cheese (Comté, Gruyère, or Emmental).
  • 1 Fresh Egg.
  • 2 Tablespoons Cornstarch or Flour.
  • Olive Oil, for frying.
  • Salt and Pepper, to taste.

Instructions

  1. Peel and grate the potatoes, then squeeze out excess moisture.
  2. Grate the zucchini and add it to the bowl with the potatoes.
  3. Add the chopped onion and pressed garlic, then mix gently.
  4. Sprinkle in the cornstarch, salt, and pepper. Mix until combined.
  5. Add grated cheese and egg, stirring until a sticky mixture forms.
  6. Heat olive oil in a skillet over high heat. Scoop mixture and form fritters in the pan.
  7. Cook until golden brown on both sides (10-15 minutes total).
  8. Remove from skillet and place on paper towels to absorb excess oil.
  9. Serve hot with your favorite dipping sauce.
