Ingredients

- 2 Potatoes (200-300g), starchy variety like Russets.
- 1 Zucchini (around 200g), medium-sized.
- 1 Finely Chopped Fresh Onion.
- 1 Pressed Garlic Clove.
- 50g Grated Cheese (Comté, Gruyère, or Emmental).
- 1 Fresh Egg.
- 2 Tablespoons Cornstarch or Flour.
- Olive Oil, for frying.
- Salt and Pepper, to taste.
Instructions
- Peel and grate the potatoes, then squeeze out excess moisture.
- Grate the zucchini and add it to the bowl with the potatoes.
- Add the chopped onion and pressed garlic, then mix gently.
- Sprinkle in the cornstarch, salt, and pepper. Mix until combined.
- Add grated cheese and egg, stirring until a sticky mixture forms.
- Heat olive oil in a skillet over high heat. Scoop mixture and form fritters in the pan.
- Cook until golden brown on both sides (10-15 minutes total).
- Remove from skillet and place on paper towels to absorb excess oil.
- Serve hot with your favorite dipping sauce.
