- 1 heaping cup cauliflower florets (or use potatoes)
- 1 heaping cup peeled and cubed potatoes
- 1/2 teaspoon garlic powder
- 1 teaspoon Italian herbs
- 1 tablespoon nutritional yeast

- 2 teaspoons extra virgin olive oil
- 1/4 cup non-dairy milk
- 1 (15 ounce) can lentils (drained) or 1 1/2 cups of cooked lentils
- 2 teaspoons oil
- 1 teaspoon Italian herbs
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 tablespoon nutritional yeast (optional)
- Fresh lemon juice (to taste)
- Chopped parsley or green onion, for garnish
- Olive oil, for drizzling
- Freshly cracked black pepper, to taste
Instructions
- In a large pot, bring water to a boil. Add cauliflower and potatoes, and cook until tender (about 15 minutes).
- Drain the vegetables and return to the pot. Add garlic powder, Italian herbs, nutritional yeast, salt, olive oil, and non-dairy milk. Mash everything together until creamy. Adjust seasoning to taste and set aside.
- In a skillet, heat 2 teaspoons of oil over medium heat. Add the drained lentils and season with Italian herbs, smoked paprika, onion powder, garlic powder, and salt. Cook for about 5-7 minutes, stirring occasionally, until the lentils are slightly crispy and browned.
- Serve the creamy mashed potatoes in a bowl and top generously with the popped lentils. Drizzle with olive oil, a squeeze of fresh lemon, and garnish with parsley or green onions for a burst of color.
