  • 1/4 teaspoon salt
  • 2 teaspoons extra virgin olive oil
  • 1/4 cup non-dairy milk
  • 1 (15 ounce) can lentils (drained) or 1 1/2 cups of cooked lentils
  • 2 teaspoons oil
  • 1 teaspoon Italian herbs
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon nutritional yeast (optional)
  • Fresh lemon juice (to taste)
  • Chopped parsley or green onion, for garnish
  • Olive oil, for drizzling
  • Freshly cracked black pepper, to taste

Instructions

  1. In a large pot, bring water to a boil. Add cauliflower and potatoes, and cook until tender (about 15 minutes).
  2. Drain the vegetables and return to the pot. Add garlic powder, Italian herbs, nutritional yeast, salt, olive oil, and non-dairy milk. Mash everything together until creamy. Adjust seasoning to taste and set aside.
  3. In a skillet, heat 2 teaspoons of oil over medium heat. Add the drained lentils and season with Italian herbs, smoked paprika, onion powder, garlic powder, and salt. Cook for about 5-7 minutes, stirring occasionally, until the lentils are slightly crispy and browned.
  4. Serve the creamy mashed potatoes in a bowl and top generously with the popped lentils. Drizzle with olive oil, a squeeze of fresh lemon, and garnish with parsley or green onions for a burst of color.
