- 4 boneless skinless chicken breasts
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/4 tsp freshly ground black pepper
- 1/4 tsp garlic powder
- 12 oz fettuccine
- Salt (for pasta water)
- 6 tbsp butter (room temperature)
- 2 tsp minced garlic (about 2 large cloves)
- 1 cup heavy cream
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 cup freshly grated Parmesan cheese
- Minced chives or parsley (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium-high heat and season the chicken with salt, pepper, and garlic powder. Sear for 6-7 minutes on each side until cooked through.
- Bring salted water to a rolling boil in a large pot. Add fettuccine and cook until al dente, then reserve 1 cup of pasta water and drain.
- Melt butter in the same skillet, add minced garlic and sauté until fragrant. Pour in heavy cream, stir continuously and season with salt and pepper, then gently simmer.
- Add grated Parmesan cheese to the sauce, stirring until melted and smooth. If thick, incorporate reserved pasta water. Toss sliced chicken with pasta and sauce until coated. Garnish with chives or parsley before serving.
Notes
Use organic, free-range chicken for the best flavor. Fresh fettuccine is preferred, but dried works fine. Always use fresh Parmesan cheese for optimal texture.
