- 1/4 cup powdered sugar, plus extra for rolling
- 1 teaspoon vanilla extract
- 1 tablespoon water
- 2 cups all-purpose flour
- 1/4 teaspoon kosher salt
- 2 cups ground pecans
Instructions
- Cream the room-temperature butter with 1/4 cup powdered sugar until light and fluffy.
- Add the vanilla extract and 1 tablespoon of water; mix until well combined.
- Gradually add the all-purpose flour and kosher salt, mixing on low speed.
- Fold in the ground pecans until dough comes together; add water if too crumbly.
- Cover and chill the dough in the refrigerator for at least one hour.
- Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
- Roll pieces of dough into finger shapes and arrange on the prepared baking sheet.
- Bake for about one hour, or until set and pale, checking for crispiness after 50 minutes.
- Let cool slightly, then roll in extra powdered sugar while still warm.
- Allow to cool completely before storing in an airtight container.
