- 1 sheet of puff pastry, thawed
- 1 (8-ounce) container of Tofutti dairy-free cream cheese, softened
- 1–2 tablespoons light agave nectar (or organic cane sugar, or pure maple syrup)
- 1 1/2 teaspoons pure vanilla extract
- 1–2 teaspoons vegan butter, melted
- 1–2 tablespoons organic cane sugar
- 2 cups peaches, sliced
- 1/2 cup fresh blueberries
Instructions
- Thaw the Puff Pastry: Place the puff pastry sheet at room temperature for about 30 minutes until it’s soft enough to handle.
- Soften the Cream Cheese: Allow the dairy-free cream cheese to reach room temperature for easier blending, about 15 minutes should suffice.
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix the Filling: In a mixing bowl, beat the cream cheese with 1-2 tablespoons of agave nectar and vanilla extract until smooth and creamy.
- Prepare the Puff Pastry: Roll out the thawed puff pastry to a rectangle measuring about 13×9 inches.
- Create a Border: Gently press around the edges to form a border, about half an inch thick.
- Poke Holes: Poke several holes in the center of the pastry with a fork.
- Brush and Sprinkle: Brush the edges with melted vegan butter and sprinkle with organic cane sugar.
- Add the Filling: Spread the creamy filling evenly over the pastry, then arrange the peach slices and sprinkle with blueberries on top.
- Bake: Place the tart in the preheated oven and bake for 25-30 minutes until the pastry is golden brown.
- Cool & Cut: Allow the tart to cool slightly on a wire rack, then cut into squares.
- Enjoy: Serve warm or at room temperature.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For best texture, assemble and bake the tart shortly before serving.
