- 6 large egg whites
- 100 g granulated sugar
- 6 large egg yolks
- 50 g flavorless oil (canola or vegetable)
- 50 g freshly squeezed orange juice
- 1 teaspoon vanilla extract
- 120 g cake flour
- 500 g whipping cream
- 45 g powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
- 7 mandarin oranges (peeled)
Instructions
- Preheat your oven to 375°F (190°C) and line a 9×13 inch baking tray with parchment paper.
- In a large mixing bowl, beat egg whites until soft peaks form, then add sugar until glossy peaks form.
- In another bowl, whisk egg yolks, oil, orange juice, and vanilla extract. Add flour and mix until smooth.
- Fold meringue into yolk mixture gently in three additions.
- Pour batter onto baking tray and spread evenly.
- Bake for 12-13 minutes or until a toothpick comes out clean.
- Cool for a minute, then flip onto a new sheet of parchment and remove the bottom paper.
- Roll the cake loosely with the parchment paper and let it cool completely.
- Whip the cream with powdered sugar and vanilla until soft peaks form.
- Unroll the cooled cake, spread whipped cream evenly, and add mandarins before rolling it back up.
- Wrap in plastic wrap and refrigerate overnight.
- Before serving, cut off the ends for a clean look and slice into servings.
