Description

A delightful orange Swiss roll featuring a delicate sponge wrapped around whipped cream and juicy mandarin oranges, perfect for any occasion.


Ingredients

  • 6 large egg whites
  • 100 g granulated sugar
  • 6 large egg yolks
  • 50 g flavorless oil (canola or vegetable)
  • 50 g freshly squeezed orange juice
  • 1 teaspoon vanilla extract
  • 120 g cake flour
  • 500 g whipping cream
  • 45 g powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)
  • 7 mandarin oranges (peeled)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a 9×13 inch baking tray with parchment paper.
  2. In a large mixing bowl, beat egg whites until soft peaks form, then add sugar until glossy peaks form.
  3. In another bowl, whisk egg yolks, oil, orange juice, and vanilla extract. Add flour and mix until smooth.
  4. Fold meringue into yolk mixture gently in three additions.
  5. Pour batter onto baking tray and spread evenly.
  6. Bake for 12-13 minutes or until a toothpick comes out clean.
  7. Cool for a minute, then flip onto a new sheet of parchment and remove the bottom paper.
  8. Roll the cake loosely with the parchment paper and let it cool completely.
  9. Whip the cream with powdered sugar and vanilla until soft peaks form.
  10. Unroll the cooled cake, spread whipped cream evenly, and add mandarins before rolling it back up.
  11. Wrap in plastic wrap and refrigerate overnight.
  12. Before serving, cut off the ends for a clean look and slice into servings.
