Ingredients

  • 1 cup plant-based milk
  • 2 cups kale or spinach, chopped
  • Salt and pepper to taste
  • Optional: nutritional yeast for added flavor

Instructions

  1. In a large pot, heat the olive oil over medium heat until a piece of onion sizzles.
  2. Add the diced onion, carrots, and celery; sauté until softened and fragrant, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute.
  4. Add the vegetable broth and bring to a gentle simmer for 3-5 minutes.
  5. Add the gnocchi and cook according to package instructions, about 3-5 minutes.
  6. Stir in the plant-based milk and chopped greens; simmer for another 3 minutes.
