- 4 boneless skinless chicken breasts
- 2 tbsp avocado or vegetable oil
- 1 tsp kosher salt
- 1/4 tsp freshly-ground black pepper
- 1/4 tsp garlic powder
- 1/2 tsp red chili flakes
- 6 tbsp unsalted butter
- 1 clove garlic (minced)
- 1 cup heavy cream
- 1/4 tsp black pepper
- 1/2 tsp kosher salt
- 1/2 cup grated Parmesan cheese
- 1/2 cup grated Asiago cheese
- Minced chives or parsley (for garnish)
Instructions
- Season the chicken: Rinse and pat dry chicken breasts. Season with kosher salt, black pepper, garlic powder, and red chili flakes.
- Grill the chicken: Preheat grill over medium-high heat. Add oil and grill chicken for 6-7 minutes per side until cooked through.
- Cook the tortelloni: In a large pot of salted boiling water, cook tortelloni according to package instructions, usually 3-5 minutes. Drain and set aside.
- Melt the butter: In a large skillet, melt butter over medium heat. Add garlic and sauté for 1 minute.
- Combine cream and cheese: Whisk in heavy cream and bring to a gentle simmer. Stir in Parmesan and Asiago until melted and creamy. Season with black pepper and salt.
- Add drained tortelloni to the sauce, tossing gently to coat, then fold in sliced grilled chicken and heat through for 2-3 minutes.
- Serve: Plate the dish, garnishing with chives or parsley, and enjoy!
Notes
For added richness, consider adding a splash of white wine to the sauce. Store leftovers in an airtight container for 2-3 days.
