Description

A creamy, dreamy Alfredo dish featuring homemade Asiago tortelloni and grilled chicken, perfect for family gatherings.

Ingredients

Scale
  • 1 lb tortelloni or tortellini (fresh preferred)
  • 4 boneless skinless chicken breasts
  • 2 tbsp avocado or vegetable oil
  • 1 tsp kosher salt
  • 1/4 tsp freshly-ground black pepper
  • 1/4 tsp garlic powder
  • 1/2 tsp red chili flakes
  • 6 tbsp unsalted butter
  • 1 clove garlic (minced)
  • 1 cup heavy cream
  • 1/4 tsp black pepper
  • 1/2 tsp kosher salt
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated Asiago cheese
  • Minced chives or parsley (for garnish)

Instructions

  1. Season the chicken: Rinse and pat dry chicken breasts. Season with kosher salt, black pepper, garlic powder, and red chili flakes.
  2. Grill the chicken: Preheat grill over medium-high heat. Add oil and grill chicken for 6-7 minutes per side until cooked through.
  3. Cook the tortelloni: In a large pot of salted boiling water, cook tortelloni according to package instructions, usually 3-5 minutes. Drain and set aside.
  4. Melt the butter: In a large skillet, melt butter over medium heat. Add garlic and sauté for 1 minute.
  5. Combine cream and cheese: Whisk in heavy cream and bring to a gentle simmer. Stir in Parmesan and Asiago until melted and creamy. Season with black pepper and salt.
  6. Add drained tortelloni to the sauce, tossing gently to coat, then fold in sliced grilled chicken and heat through for 2-3 minutes.
  7. Serve: Plate the dish, garnishing with chives or parsley, and enjoy!

Notes

For added richness, consider adding a splash of white wine to the sauce. Store leftovers in an airtight container for 2-3 days.
