Ingredients

  • 3 tablespoons raw sugar (up to 1/4 cup for sweeter cookies)
  • A pinch of salt
  • 1/2 cup raw almond flour
  • 3/4 teaspoon baking powder
  • 1 cup oat flour
  • Spices of choice (cinnamon, nutmeg, etc.)
  • 1/3 to 1/2 cup dark chocolate chunks

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together oat flour, almond flour, raw sugar, baking powder, and a pinch of salt until well combined.
  3. Pour in almond milk and mix until a stiff dough forms.
  4. Fold in dark chocolate chunks until evenly distributed.
  5. Chill the dough in the refrigerator for 10-15 minutes.
  6. Shape dough into balls, flatten slightly, and place on a lined baking sheet.
  7. Bake for 17 minutes until edges turn golden brown.
  8. Let cool for 1 minute before transferring to a wire rack.
