- 2 cups medjool dates, tightly packed
- 1 1/2 cups almond flour
- 1 cup raw walnuts
- 1/2 cup cocoa powder
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 1/2 cups vegan chocolate chips
- 2/3 cup canned coconut cream
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1/4 cup rainbow candy-coated chips
Instructions
- Line a 9×9 square dish with parchment paper.
- In a food processor, blend almond flour, walnuts, cocoa powder, vanilla extract, and salt until walnuts break down.
- Add medjool dates and blend until a sticky dough forms.
- Press brownie dough into the lined dish to create an even layer.
- In a bowl, combine chocolate chips, maple syrup, and vanilla extract.
- Heat coconut cream and whisk until smooth, then pour over chocolate mixture and whisk until combined.
- Spread chocolate ganache over the brownie base and sprinkle with candy-coated chips.
- Chill in the refrigerator for 4 hours until set.
- Lift out using parchment paper, slice into squares, and serve.
Notes
For best flavor, use high-quality coconut cream and cocoa powder. These brownies can be stored in the refrigerator for up to a week or frozen for 3 months.
