Ingredients

- 14 oz firm tofu, cubed
- 8 oz mushrooms, sliced (shiitake or cremini)
- 2 tablespoons soy sauce (low-sodium)
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons vegetable oil
- Your favorite vegetables (e.g., bell peppers, broccoli, snap peas)
- Salt and pepper to taste
Instructions
- Press the tofu: Drain the tofu and wrap it in a clean kitchen towel. Place it on a cutting board and weigh it down with a heavy skillet for about 15 minutes. After pressing, cut into cubes.
- Cook the tofu: Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Once hot, add the tofu cubes in a single layer, cooking until crispy and golden, about 5-7 minutes per side. Remove the tofu and set aside.
- Sauté the mushrooms: In the same skillet, add the remaining tablespoon of oil. Toss in the sliced mushrooms and cook until soft and browned, about 5 minutes.
- Add garlic and ginger: Stir in minced garlic and ginger, cooking for about a minute until fragrant.
- Include your veggies: Add your favorite vegetables and stir-fry until bright and tender, roughly 3-4 minutes.
- Combine everything: Return the crispy tofu to the skillet, add the soy sauce, salt, and pepper. Stir well and let sauté together for about 2-3 minutes.
- Serve hot: Enjoy your stir-fry over rice or noodles.
Notes
Customize with seasonal veggies and adjust spice levels as desired. Store leftovers in an airtight container in the fridge for up to 3 days.
