- 4 pieces boneless, skinless chicken breasts
- 1 cup mushrooms, chopped (cremini or shiitake preferred)
- 1/2 cup cream cheese, softened
- 1/2 cup shredded mozzarella cheese (or provolone for a smokier flavor)
- 2 cloves garlic, minced
- 1 tablespoon fresh herbs (parsley, thyme, or basil), finely chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped mushrooms and minced garlic, sautéing until softened, about 5-7 minutes. Season with salt and pepper and transfer to a bowl.
- Stir in cream cheese, mozzarella, and chopped herbs into the mushroom mixture until well combined.
- Cut a pocket into the thickest side of each chicken breast. Season the outside with salt and pepper.
- Spoon the mushroom filling into each chicken pocket, securing with toothpicks if needed.
- Place stuffed chicken breasts in a lightly oiled baking dish. Drizzle with olive oil and bake for 25-30 minutes or until internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before slicing and serving.

Ensure mushrooms are cooked well to avoid excess moisture. Use a meat thermometer for accurate internal temperature.
