  • 1 cup mushrooms, chopped (cremini or shiitake preferred)
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese (or provolone for a smokier flavor)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh herbs (parsley, thyme, or basil), finely chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped mushrooms and minced garlic, sautéing until softened, about 5-7 minutes. Season with salt and pepper and transfer to a bowl.
  3. Stir in cream cheese, mozzarella, and chopped herbs into the mushroom mixture until well combined.
  4. Cut a pocket into the thickest side of each chicken breast. Season the outside with salt and pepper.
  5. Spoon the mushroom filling into each chicken pocket, securing with toothpicks if needed.
  6. Place stuffed chicken breasts in a lightly oiled baking dish. Drizzle with olive oil and bake for 25-30 minutes or until internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for 5 minutes before slicing and serving.
