Ingredients

- 1 cup quinoa
- 1 can chickpeas, drained and rinsed
- 1 cup kale, chopped
- 1 cup roasted cauliflower florets
- 1 cup cooked lentils
- 2 tablespoons tahini
- Juice of 1 lemon
- 1 teaspoon Moroccan spice blend
- Salt and pepper to taste
- Water or vegetable broth (for cooking quinoa)
Instructions
- Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups of water or vegetable broth. Bring to a boil, reduce heat, cover, and simmer for about 15 minutes.
- In a mixing bowl, combine drained chickpeas, cooked lentils, and 1 teaspoon of Moroccan spice blend. Toss well to coat.
- In another bowl, whisk together tahini, juice of 1 lemon, and salt, adding water gradually until smooth.
- Once quinoa is cooked, fluff it and layer it in a bowl. Top with spiced chickpeas, chopped kale, and roasted cauliflower.
- Drizzle tahini sauce over the bowl and sprinkle with salt and pepper to taste.
- Serve warm and enjoy!
