- 2 teaspoons olive oil
- 1 small onion, diced (about ½ cup)
- 3 medium carrots, sliced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon cinnamon
- 1 teaspoon freshly ground black pepper, to taste
- 1 teaspoon sea salt, to taste
- ½ teaspoon sweet paprika
- ¼ teaspoon cayenne pepper, optional, to taste
- 400 ml (13.5 oz) canned diced tomatoes
- 200 ml (~¾ cup) vegetable broth or water
- 300 grams (1 ½ cups) cooked or canned chickpeas, rinsed and drained
- 50 grams (~2 cups) hardy greens (spinach, kale, chard, etc.), optional
Instructions
- Heat the olive oil in a large pot over medium heat. Add the onions and cook for about 5 to 6 minutes, or until they turn translucent and fragrant.
- Toss in the sliced carrots and sauté them for another 5 minutes, allowing them to soften slightly.
- Add the minced garlic, cumin, cinnamon, black pepper, sea salt, paprika, and cayenne pepper (if using), stirring well to coat the carrots with the spices. Cook for about a minute until the spices are fragrant.
- Pour in the diced tomatoes and vegetable broth, stirring everything to combine. Add the chickpeas, cover the pot, and increase the heat to bring to a rolling boil.
- Reduce the heat to medium low and simmer, covered, for about 20 minutes, or until the carrots are fork-tender.
- Taste and season as necessary; if you prefer a thicker stew, you can simmer with the lid slightly ajar. Stir in the greens if using.
- Ladle the stew into bowls and serve hot, optionally garnished with pomegranate seeds, preserved lemon, or raisins.
Notes
This stew is vegan and can be customized with various hardy greens. Adjust spices to your preference for heat.
