Ingredients

- 2 cans chickpeas, drained
- 1 cucumber, diced
- 1 orange bell pepper, finely chopped
- 1 cup finely chopped parsley
- 1 clamshell tomatoes, quartered
- 1/2 cup roughly chopped pistachios
- 5 oz block feta, crumbled
- Additional salt and pepper to taste
- 1/3 cup olive oil
- 2 tablespoons harissa
- 1 clove garlic, minced
- 1 teaspoon salt
- Pinch black pepper
- 1/4 cup apple cider vinegar
- 2 teaspoons honey
- 1 teaspoon mustard
Instructions
- Make the Harissa Vinaigrette: In a jar or bowl, combine olive oil, harissa, minced garlic, salt, black pepper, apple cider vinegar, honey, and mustard. Shake or whisk until smooth.
- Prepare the Salad: In a large mixing bowl, combine chickpeas, cucumber, orange bell pepper, parsley, and quartered tomatoes.
- Add the Crunch: Toss in pistachios and crumbled feta. Season with additional salt and pepper if desired.
- Combine Everything: Drizzle the harissa vinaigrette over the salad and toss gently until well-coated.
- Serve and Enjoy: Transfer to a serving bowl and enjoy!
Notes
Store in an airtight container in the fridge for up to 3 days. Add pistachios just before serving for maximum crunch.
