Ingredients

  • 1 clamshell tomatoes, quartered
  • 1/2 cup roughly chopped pistachios
  • 5 oz block feta, crumbled
  • Additional salt and pepper to taste
  • 1/3 cup olive oil
  • 2 tablespoons harissa
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • Pinch black pepper
  • 1/4 cup apple cider vinegar
  • 2 teaspoons honey
  • 1 teaspoon mustard

Instructions

  1. Make the Harissa Vinaigrette: In a jar or bowl, combine olive oil, harissa, minced garlic, salt, black pepper, apple cider vinegar, honey, and mustard. Shake or whisk until smooth.
  2. Prepare the Salad: In a large mixing bowl, combine chickpeas, cucumber, orange bell pepper, parsley, and quartered tomatoes.
  3. Add the Crunch: Toss in pistachios and crumbled feta. Season with additional salt and pepper if desired.
  4. Combine Everything: Drizzle the harissa vinaigrette over the salad and toss gently until well-coated.
