- 1 block firm tofu
- 1 tablespoon olive oil
- 1 cup sun-dried tomatoes, diced
- 1 cup coconut cream or cashew cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 package gnocchi
- Fresh basil for garnish
Instructions
- Press the tofu by wrapping it in a kitchen towel and placing a heavy object on top for 15 minutes.
- Sauté the tofu cubes in olive oil over medium heat for 5-7 minutes until golden brown and crispy.
- Add sun-dried tomatoes, garlic powder, onion powder, salt, and pepper; stir and cook for 2-3 minutes.
- Pour in coconut cream and simmer gently, stirring occasionally.
- Cook gnocchi according to package instructions; drain and add to the skillet with the tofu sauce.
- Toss gently and cook together for another 2-3 minutes.
- Serve hot, garnished with fresh basil leaves.
Notes
Quality matters for tofu; firm or extra-firm is recommended. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
