Description

A delightful blend of crispy tofu and pillowy gnocchi, enriched with sun-dried tomatoes and a creamy coconut sauce, perfect for cozy dinners and special occasions.


Ingredients

  • 1 block firm tofu
  • 1 tablespoon olive oil
  • 1 cup sun-dried tomatoes, diced
  • 1 cup coconut cream or cashew cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 package gnocchi
  • Fresh basil for garnish

Instructions

  1. Press the tofu by wrapping it in a kitchen towel and placing a heavy object on top for 15 minutes.
  2. Sauté the tofu cubes in olive oil over medium heat for 5-7 minutes until golden brown and crispy.
  3. Add sun-dried tomatoes, garlic powder, onion powder, salt, and pepper; stir and cook for 2-3 minutes.
  4. Pour in coconut cream and simmer gently, stirring occasionally.
  5. Cook gnocchi according to package instructions; drain and add to the skillet with the tofu sauce.
  6. Toss gently and cook together for another 2-3 minutes.
  7. Serve hot, garnished with fresh basil leaves.

Notes

Quality matters for tofu; firm or extra-firm is recommended. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
