- 8 oz. block cheddar cheese (sharp)
- 8 oz. block cream cheese (chilled)
- 2 oz. sun-dried tomatoes in oil (drained and finely chopped)
- 3 cloves garlic (minced)
- 1 tbsp finely chopped fresh parsley
- 1 tsp finely chopped basil
- 1 tsp finely chopped fresh oregano
- 1 tsp finely chopped fresh thyme
- 2 tsp honey
- Pinch of salt
- Pinch of crushed red pepper flakes (optional)
- ½ cup extra virgin olive oil
- ¼ cup white wine vinegar
- Crackers or crostini (for serving)
Instructions
- Using a sharp knife, cut the cheddar cheese block in half lengthwise and then into ¼-inch thick squares. Repeat with the cream cheese.
- Place the cheese squares in a deep serving dish.
- In a bowl, whisk together sun-dried tomatoes, garlic, parsley, basil, oregano, thyme, honey, salt, red pepper flakes, olive oil, and white wine vinegar until smooth.
- Pour the marinade over the cheese, covering it evenly, and refrigerate for at least 6 hours or overnight.
- Serve the marinated cheeses with crackers or crostini, drizzling additional marinade over the top.
Notes
Leftovers can be stored in an airtight container in the fridge for up to a week. The flavors will continue to develop.
