Ingredients

  • 8 oz. block cheddar cheese (sharp)
  • 8 oz. block cream cheese (chilled)
  • 2 oz. sun-dried tomatoes in oil (drained and finely chopped)
  • 3 cloves garlic (minced)
  • 1 tbsp finely chopped fresh parsley
  • 1 tsp finely chopped basil
  • 1 tsp finely chopped fresh oregano
  • 1 tsp finely chopped fresh thyme
  • 2 tsp honey
  • Pinch of salt
  • Pinch of crushed red pepper flakes (optional)
  • ½ cup extra virgin olive oil
  • ¼ cup white wine vinegar
  • Crackers or crostini (for serving)

Instructions

  1. Using a sharp knife, cut the cheddar cheese block in half lengthwise and then into ¼-inch thick squares. Repeat with the cream cheese.
  2. Place the cheese squares in a deep serving dish.
  3. In a bowl, whisk together sun-dried tomatoes, garlic, parsley, basil, oregano, thyme, honey, salt, red pepper flakes, olive oil, and white wine vinegar until smooth.
  4. Pour the marinade over the cheese, covering it evenly, and refrigerate for at least 6 hours or overnight.
  5. Serve the marinated cheeses with crackers or crostini, drizzling additional marinade over the top.

Notes

Leftovers can be stored in an airtight container in the fridge for up to a week. The flavors will continue to develop.
