Ingredients

  • 2 filets salmon
  • Black pepper to taste
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1 tablespoon fresh chopped basil
  • 68 oz snap peas
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • Black pepper to taste
  • Garlic powder to taste (optional)
  • Juice from another 1/2 lemon
  • 1/3 cup broth or water
  • 1/4 cup coconut milk
  • 1/2 cup jasmine rice
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix lemon zest, lemon juice, garlic, honey, olive oil, salt, paprika, and basil until smooth.
  3. Marinate the salmon filets in the mixture for about 10 minutes.
  4. Cook the rice by combining rice, broth, coconut milk, and salt in your rice cooker or Instant Pot.
  5. Toss snap peas in olive oil, salt, pepper, and garlic powder, then roast for 5 minutes on a lined sheet pan.
  6. Add marinated salmon to the sheet pan with the snap peas and bake for 6-10 minutes until the salmon is cooked through.
  7. Serve the rice topped with salmon and snap peas, garnishing with lemon wedges and basil if desired.

Notes

For a crispy skin, sear the salmon skin-side down in a pan for 2 minutes before baking. You can substitute snap peas with asparagus or green beans.
