Description
Delicious and wholesome pancakes made with oats and cottage cheese, sweetened with honey and brightened with lemon.
Ingredients

- 1 cup + 2 tablespoons rolled oats
- 1.5 teaspoons baking powder
- 1 cup cottage cheese
- 3 eggs
- 2 tablespoons lemon juice
- 1 tablespoon grated lemon zest
- 1 teaspoon vanilla bean paste
- 1/4 cup Manuka honey
- 1–2 tablespoons butter for cooking
- Optional toppings: Additional honey, fresh raspberries, or mixed berries
Instructions
- Blend all pancake ingredients in a blender until smooth.
- Heat a skillet over medium heat and add butter.
- Pour a little less than 1/2 cup of batter into the skillet and cook for 3–5 minutes.
- Flip the pancake once golden brown and cook for an additional 2-3 minutes.
- Repeat until all the batter is cooked, yielding around 8-10 pancakes.
- Serve stacked with additional honey and fresh berries.
Notes
Ensure butter is at room temperature for easier mixing. Leftovers can be stored in the fridge for later.
