Description

A quick and vibrant pasta dish combining zesty lemon with fresh broccoli for a healthy and flavorful dinner.


Ingredients

Scale
  • 1 large broccoli, cut into small florets
  • Zest of 1 lemon
  • Juice of 1 lemon (2 to 3 tablespoons)
  • 3 tablespoons olive oil
  • 1 clove garlic, finely grated or minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon hot pepper flakes (optional)
  • 250 grams (2 and 1/4 cups) short pasta
  • 120 ml (1/2 cup) reserved pasta water
  • Handful fresh basil, chopped (optional)

Instructions

  1. Prepare broccoli by cutting it into small florets and chopping the stem into small pieces.
  2. In a mixing bowl, combine lemon zest, lemon juice, olive oil, garlic, salt, pepper, and hot pepper flakes, whisking until well mixed.
  3. Boil salted water in a large pot and cook the pasta according to package instructions, adding broccoli two minutes before the pasta finishes cooking.
  4. Before draining, reserve 120ml of the pasta water.
  5. Whisk the reserved pasta water into the lemon sauce mixture until smooth.
  6. Drain the pasta and broccoli, and return to the pot. Add the lemon sauce and chopped basil, tossing everything to coat. Serve immediately with an extra drizzle of olive oil if desired.

Notes

This dish is best enjoyed fresh, but can be stored in an airtight container for up to 3 days.
