Kolacky Cookies are a delightful pastry with a buttery cream cheese dough filled with fruit jam, perfect for any occasion.

- 1 cup cream cheese, softened
- 2 sticks unsalted butter, softened
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup fruit jam (apricot or raspberry recommended)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat together the softened cream cheese and butter until very smooth and creamy—about 2-3 minutes.
- Gradually mix in the granulated sugar until combined, followed by the vanilla extract.
- Slowly add the all-purpose flour, mixing until a soft but not sticky dough forms.
- On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
- Cut the dough into squares, transfer them to your prepared baking sheet, and spoon 1/2 teaspoon of jam into the center of each square.
- Gently fold the corners of each square toward the center, overlapping them slightly, and press gently to seal.
- Bake for 20-25 minutes, or until the edges are lightly golden and the cookies are firm.
- Let the Kolacky cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
