Description

Kolacky Cookies are a delightful pastry with a buttery cream cheese dough filled with fruit jam, perfect for any occasion.


Ingredients

  • 1 cup cream cheese, softened
  • 2 sticks unsalted butter, softened
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fruit jam (apricot or raspberry recommended)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat together the softened cream cheese and butter until very smooth and creamy—about 2-3 minutes.
  3. Gradually mix in the granulated sugar until combined, followed by the vanilla extract.
  4. Slowly add the all-purpose flour, mixing until a soft but not sticky dough forms.
  5. On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
  6. Cut the dough into squares, transfer them to your prepared baking sheet, and spoon 1/2 teaspoon of jam into the center of each square.
  7. Gently fold the corners of each square toward the center, overlapping them slightly, and press gently to seal.
  8. Bake for 20-25 minutes, or until the edges are lightly golden and the cookies are firm.
  9. Let the Kolacky cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
