Ingredients

- 400 ml (1⅔ cups) non-dairy milk or dairy milk
- 2 tablespoons honey or maple syrup
- 2 tablespoons olive oil
- 2¼ teaspoons dry yeast
- 450 grams (1 pound) Khorasan flour
- 1 teaspoon sea salt
Instructions
- In a small saucepan, heat the milk until just warm to the touch.
- Pour it into a large mixing bowl, then stir in the honey and olive oil.
- Sprinkle the dry yeast into the warm milk mixture and let it sit for about 10 minutes until frothy.
- Stir in the Khorasan flour and sea salt to form a wet, shaggy dough.
- Knead the dough on a floured surface until smooth and elastic for about 8 minutes.
- Transfer the dough to a greased bowl, cover it, and let it rise for about 1 hour until doubled in size.
- Flour a work surface, turn out the dough, shape it into a rectangle, and roll it tightly into a loaf.
- Place the loaf seam-side down in a greased bread tin and cover it to rise again for 30 minutes.
- Preheat the oven to 190°C (375°F).
- Bake the bread for 30-35 minutes until golden brown and hollow sounding when tapped.
- Let it cool before transferring to a wire rack.
Notes
Ensure the milk is warm but not hot to protect the yeast. Store in a paper bag for freshness.
