Description

Delightfully crunchy Khorasan Bread that boasts a nutty flavor and dense texture, perfect for family dinners or brunch.


Ingredients

Scale
  • 400 ml (1⅔ cups) non-dairy milk or dairy milk
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons olive oil
  • 2¼ teaspoons dry yeast
  • 450 grams (1 pound) Khorasan flour
  • 1 teaspoon sea salt

Instructions

  1. In a small saucepan, heat the milk until just warm to the touch.
  2. Pour it into a large mixing bowl, then stir in the honey and olive oil.
  3. Sprinkle the dry yeast into the warm milk mixture and let it sit for about 10 minutes until frothy.
  4. Stir in the Khorasan flour and sea salt to form a wet, shaggy dough.
  5. Knead the dough on a floured surface until smooth and elastic for about 8 minutes.
  6. Transfer the dough to a greased bowl, cover it, and let it rise for about 1 hour until doubled in size.
  7. Flour a work surface, turn out the dough, shape it into a rectangle, and roll it tightly into a loaf.
  8. Place the loaf seam-side down in a greased bread tin and cover it to rise again for 30 minutes.
  9. Preheat the oven to 190°C (375°F).
  10. Bake the bread for 30-35 minutes until golden brown and hollow sounding when tapped.
  11. Let it cool before transferring to a wire rack.

Notes

Ensure the milk is warm but not hot to protect the yeast. Store in a paper bag for freshness.
