Description
A flavorful and creamy Chicken Tikka Masala made easily in an Instant Pot, perfect for busy weeknights.
Ingredients

- 2 chicken breasts, cut into large cubes (about 2 pounds)
- 1 cup plain yogurt
- 1.5 tsp kosher salt
- 2 tbsp lemon juice
- 1 tbsp ginger, minced
- 1 tbsp garlic, minced
- 1 tsp chili powder
- 1 tbsp garam masala
- 1 tsp turmeric powder
- 1 tbsp butter
- 1 tbsp olive oil
- 1 large onion, finely diced
- 1.5 cups tomato sauce
- 14 oz diced tomatoes (1 can)
- 1–2 tsp dried fenugreek leaves (optional)
- 1/2 cup heavy cream
- 1/3 cup cilantro, chopped (for garnish)
- Extra yogurt (for serving)
- Rice and naan bread (for serving)
Instructions
- Marinate the chicken by mixing all marinade ingredients with the diced chicken, cover, and refrigerate for at least 30 minutes.
- Turn the Instant Pot on sauté mode, add butter and olive oil, onions, and salt, cooking until onions are softened, about 3-4 minutes.
- Add minced ginger and garlic, stirring for another minute, then mix in turmeric, garam masala, and curry powder. Pour in 1/4 cup water, scraping the bottom of the pot.
- Incorporate canned diced tomatoes and tomato passata, stir well, and press ‚Cancel‘ to stop sauté mode.
- Add marinated chicken and all marinade into the pot, mix well, and secure the lid. Set to Pressure Cook/Manual for 5 minutes.
- Allow pressure to release naturally for 10-15 minutes after cooking.
- Remove lid and stir the curry; if using, add fenugreek leaves, set to sauté mode again, and let sauce thicken for 5-7 minutes.
- Stir in heavy cream and garnish with fresh cilantro before serving.
Notes
Use fresh ingredients for best flavor. Adjust spice levels to taste. This dish can be made ahead by marinating the chicken the day before.
