  • 1/2 lime (juiced, plus lime wedges for serving)
  • 1 1/2 tsp kosher salt
  • 1/2 tsp cayenne
  • 1/4 tsp turmeric
  • 1 lb fish fillets or steaks (tilapia or cod recommended)
  • 1/4 cup coconut or vegetable oil

Instructions

  1. Make the Marinade: Combine garlic, ginger, lime juice, kosher salt, cayenne, and turmeric in a small bowl until it forms a smooth paste.
  2. Prepare the Fish: Pat the fish dry with paper towels. Rub the spice paste generously all over the fish. Let stand at room temperature for 30 minutes or refrigerate for up to 2 hours.
  3. Heat the Pan: Preheat a heavy skillet over high heat until sizzling hot.
  4. Add Oil: Pour in the coconut or vegetable oil until it shimmers.
  5. Cook the Fish: Slide half of the fish into hot oil. Cook undisturbed for about 2-3 minutes until it lifts easily from the pan.
  6. Flip and Finish: Flip the fish over and cook for another 1-2 minutes until opaque and flakes easily.
  7. Serve: Transfer fish to a plate lined with paper towels to absorb excess oil. Serve warm with lime wedges.

Notes

For crispier fish, refrigerate the marinated fish for up to 2 hours before cooking. Fresh coconut oil enhances flavor.
