- 4 pork chops (¾–1 inch thick, boneless or bone-in)
- 2 tbsp brown sugar
- 2 tsp paprika
- 2 tsp garlic powder
- 1 ½ tsp kosher salt
- ½ tsp black pepper
- ½ tsp cayenne pepper (optional)
- 2 tbsp olive oil
Instructions
- Preheat your broiler to 500°F, placing the oven rack 4-6 inches from the heat source.
- Mix the brown sugar, paprika, garlic powder, kosher salt, black pepper, and cayenne pepper in a small bowl.
- Drizzle olive oil over each pork chop and rub the seasoning mix evenly on both sides.
- Broil the chops for 3 minutes on one side, then rotate the pan and broil for another 3 minutes.
- Check the internal temperature of the pork chops, aiming for 140-145°F; broil longer if necessary.
- Rest the pork chops for at least 5 minutes before serving.
Notes
Use bone-in chops for juicier results. Always rest the chops after cooking to retain moisture.
