Ingredients

  • 250 ml (1 cup) water, room temperature
  • 3 tablespoons honey
  • 2 1/4 teaspoons dry yeast or 1/2 cube fresh yeast
  • 100 grams (1 cup) rolled oats
  • 1 teaspoon sea salt
  • 400 grams (2 2/3 cup) spelt flour

Instructions

  1. In a large mixing bowl, combine water, honey, and yeast. Whisk well and let sit for 5 minutes until frothy.
  2. Add oats, salt, and about a third of the flour (around 150 grams or 1 cup) into the yeast mixture and stir until combined.
  3. Mix in the remaining flour until a shaggy dough forms. Cover and let sit for 10 minutes.
  4. Dust work surface with flour and knead the dough for 5-6 minutes until smooth.
  5. Place the kneaded dough in a bowl, cover, and let it rise in a warm spot until doubled (about 1 hour).
  6. Prepare a standard bread tin (25.5 cm long) by greasing or lining it with parchment paper.
  7. After the rise, punch down the dough and shape it into a square (24 cm across).
  8. Roll the dough tightly into a log, seam-side down in the prepared tin, and let it rise for another 30 minutes.
  9. Preheat your oven to 190 degrees C (375 degrees F).
  10. Brush the top with milk or an egg wash, sprinkle some rolled oats, and bake for 38-40 minutes until golden brown and internal temperature is 90 degrees C (194 degrees F).
  11. Let cool in the tin for 10 minutes before transferring to a wire rack.

Notes

Storage: Keep wrapped for up to 3 days at room temperature or freeze for up to 1 month. This bread can also be made vegan by substituting honey with agave syrup.
