Deliciously soft and chewy vegan and gluten-free sugar cookies that bring comfort and joy in every bite.


Ingredients

  • 1 1/2 cups gluten-free all-purpose flour
  • 1/2 cup coconut oil, melted
  • 1/2 cup organic cane sugar
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Vegan icing/buttercream (optional for decoration)

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a large bowl, combine the melted coconut oil, organic cane sugar, unsweetened applesauce, and vanilla extract; whisk until smooth and creamy.
  3. In another bowl, whisk together the gluten-free flour, baking powder, and salt.
  4. Gradually incorporate the dry ingredients into the wet mixture until a dough forms.
  5. Roll out the dough to about 1/4 inch thick on a floured surface.
  6. Using cookie cutters, cut out desired shapes and place them on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden brown.
  8. Allow cookies to cool for 5 minutes on the pan before transferring to a wire rack; decorate as desired.

Notes

Store cookies in an airtight container at room temperature for up to 5 days; refrigerate for up to 10 days. Dough can be made ahead and kept wrapped in plastic wrap for up to a week in the fridge.
