Ingredients

- 3/4 medium English cucumber, grated
- 2 cups plain Greek yogurt
- 3 cloves fresh garlic, finely minced
- 2 tablespoons finely chopped fresh dill
- 2 tablespoons extra virgin olive oil
- 1 to 2 tablespoons fresh lemon juice
- Kosher salt to taste
Instructions
- Partially peel the cucumber and grate it finely.
- Sprinkle the grated cucumber with salt and set aside for 5 minutes.
- Squeeze out excess moisture from the cucumber using cheesecloth or a paper towel.
- In a bowl, combine cucumber, Greek yogurt, minced garlic, dill, olive oil, lemon juice, and salt. Mix well.
- Adjust flavors as desired and garnish with olive oil and dill.
- Serve immediately or chill for 20 minutes before serving.
Notes
Store in an airtight container in the fridge for up to 3 days. Tzatziki tastes even better the next day as the flavors meld.
