Delicious homemade chocolate coconut bars that are easy to make and customizable to your taste.

- 160 grams (2 cups) unsweetened shredded coconut
- 100 grams (1/2 cup) coconut butter, softened
- 80 grams (1/4 cup) honey or brown rice syrup
- 60 grams (1/4 cup) coconut oil, softened
- 1 teaspoon vanilla extract
- Up to 2 tablespoons water (if necessary)
- 150 grams (3/4 cup) dark chocolate
- 1 tablespoon coconut oil (for chocolate coating)
Instructions
- In a large bowl, mix together the shredded coconut, softened coconut butter, honey, softened coconut oil, and vanilla extract until well combined. If your mixture is too crumbly, add water, a tablespoon at a time, until it holds its shape.
- Line a square tin with parchment paper, allowing some overhang for easy removal. Press the coconut filling evenly into the lined tin, making sure to compact it well.
- Place your tin in the freezer for at least 20 minutes (or refrigerate for a couple of hours) to let the bars firm up before cutting.
- Once the mixture is firm, remove it from the tin using the overhanging parchment paper. Cut into approximately ten individual bars.
- Gently melt the dark chocolate and the tablespoon of coconut oil over low heat in a saucepan or using a double boiler. Stir until smooth and glossy.
- Dip each frozen bar into the melted chocolate. Use a fork to flip them and ensure they are fully coated. Place them on parchment paper to set.
- Allow the chocolate to harden completely at room temperature. Optional: drizzle a little extra chocolate over the bars for garnish.
- Once the chocolate is set, store your Homemade Bounty Bars in a sealed container in the fridge for up to a week or the freezer for up to a month.
Notes
For added crunch, sprinkle toasted shredded coconut on top after coating in chocolate. Store in an airtight container to keep them fresh.
