Description

Delicious homemade chocolate coconut bars that are easy to make and customizable to your taste.


Ingredients

  • 160 grams (2 cups) unsweetened shredded coconut
  • 100 grams (1/2 cup) coconut butter, softened
  • 80 grams (1/4 cup) honey or brown rice syrup
  • 60 grams (1/4 cup) coconut oil, softened
  • 1 teaspoon vanilla extract
  • Up to 2 tablespoons water (if necessary)
  • 150 grams (3/4 cup) dark chocolate
  • 1 tablespoon coconut oil (for chocolate coating)

Instructions

  1. In a large bowl, mix together the shredded coconut, softened coconut butter, honey, softened coconut oil, and vanilla extract until well combined. If your mixture is too crumbly, add water, a tablespoon at a time, until it holds its shape.
  2. Line a square tin with parchment paper, allowing some overhang for easy removal. Press the coconut filling evenly into the lined tin, making sure to compact it well.
  3. Place your tin in the freezer for at least 20 minutes (or refrigerate for a couple of hours) to let the bars firm up before cutting.
  4. Once the mixture is firm, remove it from the tin using the overhanging parchment paper. Cut into approximately ten individual bars.
  5. Gently melt the dark chocolate and the tablespoon of coconut oil over low heat in a saucepan or using a double boiler. Stir until smooth and glossy.
  6. Dip each frozen bar into the melted chocolate. Use a fork to flip them and ensure they are fully coated. Place them on parchment paper to set.
  7. Allow the chocolate to harden completely at room temperature. Optional: drizzle a little extra chocolate over the bars for garnish.
  8. Once the chocolate is set, store your Homemade Bounty Bars in a sealed container in the fridge for up to a week or the freezer for up to a month.

Notes

For added crunch, sprinkle toasted shredded coconut on top after coating in chocolate. Store in an airtight container to keep them fresh.
