A creamy, guilt-free dessert that blends silken tofu with ripe bananas for a deliciously healthy twist on classic banana pudding.

- 16 oz block silken tofu, drained
- 1/3 cup coconut sugar
- 1/4 teaspoon vanilla extract
- 1 tablespoon melted coconut oil
- 1 ripe banana
- 1/4 to 1/2 cup crushed graham crackers or vanilla wafers
- 1 to 1 1/2 sliced bananas (for layering)
Instructions
- In a blender, combine the drained silken tofu, coconut sugar, vanilla extract, and melted coconut oil. Blend until smooth, about 1-2 minutes.
- Adjust sweetness, then set the mixture aside.
- In small jars, layer sliced bananas, followed by crushed graham crackers, and half of the pudding mixture, then repeat the layers.
- Chill the jars in the refrigerator for 20 to 30 minutes.
- Serve chilled and enjoy!
Notes
Ensure the silken tofu is at room temperature to blend smoothly. For a thicker pudding, add more tofu. For thinner, add almond or coconut milk.
