Ingredients

  • 1/3 cup coconut sugar
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon melted coconut oil
  • 1 ripe banana
  • 1/4 to 1/2 cup crushed graham crackers or vanilla wafers
  • 1 to 1 1/2 sliced bananas (for layering)

Instructions

  1. In a blender, combine the drained silken tofu, coconut sugar, vanilla extract, and melted coconut oil. Blend until smooth, about 1-2 minutes.
  2. Adjust sweetness, then set the mixture aside.
  3. In small jars, layer sliced bananas, followed by crushed graham crackers, and half of the pudding mixture, then repeat the layers.
  4. Chill the jars in the refrigerator for 20 to 30 minutes.
  5. Serve chilled and enjoy!

Notes

Ensure the silken tofu is at room temperature to blend smoothly. For a thicker pudding, add more tofu. For thinner, add almond or coconut milk.
