Description
A creamy and guilt-free version of mint chocolate chip ice cream made with high protein cottage cheese.
Ingredients

- 16 oz tub full-fat cottage cheese
- 1/4 cup fresh mint leaves or 1/4 teaspoon mint extract
- 1 teaspoon vanilla extract
- 1 teaspoon matcha or spirulina (optional for color)
- 1/3 cup maple syrup or honey
- 1/3 to 1/2 cup chocolate chips
Instructions
- Blend all ingredients except for the chocolate chips in a food processor until smooth.
- Pour the blended mixture into a loaf pan and fold in the chocolate chips.
- Cover and freeze for 2-3 hours, stirring every 30-45 minutes for a creamy texture.
- Check consistency after a couple of hours and let thaw if too hard to scoop.
Notes
For best texture, blend longer to ensure no curds remain. Store leftovers in an airtight container for up to 2 weeks.
