Ingredients

  • 5 cups water
  • 1/2 teaspoon salt (for cooking the lentils)
  • 10 curry leaves, chopped
  • 1 hot green chili, finely chopped (optional)
  • 1 tablespoon oil (for sautéing spices)
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon chaat masala blend or dry mango powder (amchur)
  • 1/4 cup chopped cashews or peanuts
  • 2 tablespoons large flake dry coconut
  • 2 tablespoons raisins or chopped dates
  • 1 to 2 teaspoons sugar (optional)
  • 1/4 to 1/2 teaspoon salt (to taste)
  • Pepper flakes or cayenne for heat, optional
  • 1 tablespoon gochujang
  • 1 tablespoon maple syrup
  • 2 teaspoons oil (for coating lentils)
  • 1/2 teaspoon garlic powder
  • 1/4 cup roasted unsalted peanuts, chopped (optional)
  • 1/2 teaspoon lemon zest
  • 1 tablespoon chopped candied ginger or dates
  • 1/2 teaspoon salt (for flavor)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons paprika
  • 1/2 teaspoon cayenne or more to taste
  • 1 tablespoon nutritional yeast or more to taste
  • 1/4 teaspoon kala namak or 1/2 teaspoon Tajin
  • 3 teaspoons oil, divided

Instructions

  1. Cook the Lentils: Rinse the lentils under cold water until clear, combine with water and salt, bring to boil, simmer for 6-7 minutes, drain, and cool for 15 minutes.
  2. Indian-Spiced Lentil Mix: Sauté curry leaves and chili in oil, add turmeric and chaat masala, mix with lentils, nuts, coconut, raisins, and sugar; spread on baking sheet and roast at 350°F for 15-20 minutes.
  3. Peanut Gochujang Mix: Whisk gochujang, maple syrup, oil, garlic powder, and salt; fold in lentils, spread on sheet, bake at 350°F for 15-20 minutes, fold in candied ginger or dates.
  4. Nacho Cheese Mix: Toss lentils with spices and oil, spread, bake at 350°F for 15-20 minutes, finish with lemon zest.
  5. Cool and Store: Let cool completely before storing in an airtight container to maintain crispness.
