Ingredients

  • 1 cup + 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 egg, beaten (for egg wash)
  • Flaky salt to taste (about 1 teaspoon)
  • 12 tablespoons melted butter (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Add cottage cheese to a food processor and blend until smooth and creamy.
  3. In a large bowl, combine flour, salt, and baking powder.
  4. Stir in the blended cottage cheese until well combined.
  5. Knead the dough lightly on a floured surface for 2-3 minutes until smooth.
  6. Shape the dough into 12-inch ropes and twist into pretzel shapes.
  7. Place on a lined baking sheet, brush with egg wash, and sprinkle with flaky salt.
  8. Bake for 25-30 minutes until golden brown.
  9. Brush lightly with melted butter upon removing from the oven and serve warm.

Notes

For dairy-free options, substitute cottage cheese with cashew cream and use melted coconut oil for the butter.
