  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 cloves pressed or minced garlic
  • 1/2 teaspoon mustard
  • 1 teaspoon salt
  • Pinch of black pepper
  • 1 teaspoon za’atar

Instructions

  1. In a large mixing bowl, gently add the cooked butter beans, chopped mint, parsley, basil, sliced olives, crumbled feta, and finely chopped red onion.
  2. In another bowl, whisk together the olive oil, apple cider vinegar, minced garlic, mustard, salt, black pepper, and za’atar until well combined.
  3. Pour the za’atar dressing over the salad mixture and gently toss to combine. Allow to sit for 5-10 minutes before serving.
  4. If your beans are overly breaking, embrace the rustic look.
  5. Avoid over-dressing; start with half of the dressing, toss it around, and then add more based on your preference.
