- 3 1/2 to 4 cups cooked butter beans
- 1/3 cup fresh chopped mint
- 1/3 cup fresh chopped parsley
- 1/3 cup fresh chopped basil
- 6 oz sliced green olives
- 5 oz crumbled feta
- 1 small red onion, finely chopped
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 2 cloves pressed or minced garlic
- 1/2 teaspoon mustard
- 1 teaspoon salt
- Pinch of black pepper
- 1 teaspoon za’atar
Instructions
- In a large mixing bowl, gently add the cooked butter beans, chopped mint, parsley, basil, sliced olives, crumbled feta, and finely chopped red onion.
- In another bowl, whisk together the olive oil, apple cider vinegar, minced garlic, mustard, salt, black pepper, and za’atar until well combined.
- Pour the za’atar dressing over the salad mixture and gently toss to combine. Allow to sit for 5-10 minutes before serving.
- If your beans are overly breaking, embrace the rustic look.
- Avoid over-dressing; start with half of the dressing, toss it around, and then add more based on your preference.
