A fun and customizable hand roll sushi recipe perfect for family and friends gatherings.
Ingredients

- 1 cup Calrose rice (dry)
- 1 cup water
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 1 to 2 tablespoons unseasoned rice wine vinegar
- 1 teaspoon toasted sesame seeds
- 8 ounces sliced mushrooms (cremini, shiitakes, button)
- 1 tablespoon olive oil
- 1 teaspoon toasted sesame oil
- 1 teaspoon soy sauce
- 1 red bell pepper, sliced into strips
- 1 English cucumber or 6 Turkish cucumbers, cut into 4-inch strips
- 1 to 2 avocados, cut into strips
- 2 cups fresh sprouts
- 16 ounces smoked salmon (or substitute baked tofu), cut into strips
- 1 to 2 packages nori sheets, cut in half
- Wasabi paste
- Soy sauce, for dipping
Instructions
- Rinse the rice under cold water until it runs nearly clear. Strain, then cook with water, salt, and sugar for about 20 minutes.
- Transfer the cooked rice to a bowl, add vinegar while warm, and mix gently. Cover with a damp towel.
- Heat olive oil in a skillet and sauté mushrooms until tender, add sesame oil and soy sauce.
- Prepare veggies by cutting them into strips and organize in bowls.
- Cut nori sheets in half for rolling.
- To assemble, place rice on nori, followed by veggies and protein, then roll into a cone shape.
- Serve with soy sauce mixed with wasabi for dipping. Enjoy immediately!
Notes
Ensure all ingredients are prepped ahead of time for smooth rolling. Use ripe avocados for best flavor.
