Description
A refreshing summer dish featuring grilled zucchini seasoned with zaatar and served with velvety tahini yogurt.
Ingredients

- 1 1/2 lbs zucchini (or summer squash)
- 2 tablespoons extra virgin olive oil
- 2 cloves garlic, finely minced
- 2 tablespoons zaatar spice
- 1/2 teaspoon salt, more to taste
- 1/2 teaspoon pepper
- Pinch of red pepper flakes
- Juice from one lemon
- 2 tablespoons fresh herbs for garnish (like parsley, cilantro, mint, dill, or basil)
- Optional: Tahini Yogurt
- Optional: Cherry tomatoes
Instructions
- Preheat the grill to medium-high heat and grease the grates.
- In a bowl, mix tahini with yogurt until smooth, adding water slowly to reach desired consistency.
- Slice the zucchini into 1/3-inch thick slices and place in a large bowl.
- Drizzle zucchini slices with olive oil, ensuring they are well coated.
- Toss in minced garlic, salt, pepper, red pepper flakes, and zaatar until all slices are covered.
- Grill zucchini slices for 3-4 minutes until grill marks appear, then flip and grill for another 3-4 minutes.
- Check for tenderness; it should be slightly bendy and translucent but not overcooked.
- Return grilled zucchini to the bowl, drizzle with lemon juice, and adjust salt to taste.
- Serve hot over tahini yogurt sauce and garnish with fresh herbs.
Notes
For best results, marinate zucchini in zaatar and olive oil for 30 minutes before grilling.
