Ingredients

  • 1/2 whole pineapple, sliced into 1-inch thick rings
  • 1/2 cup red bell pepper, seeded and diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 jalapeño pepper, seeded and minced
  • Juice of 1 large lime
  • 1 teaspoon ground cumin
  • Salt to taste

Instructions

  1. Preheat your grill or grill pan to medium-high heat, lightly oiling the grates.
  2. Grill the pineapple slices for about 4 to 5 minutes on each side until grill marks appear.
  3. Remove grilled pineapple and chill in the refrigerator.
  4. After 10-15 minutes, chop the cooled pineapple into 1/4-inch pieces.
  5. In a bowl, mix pineapple with red bell pepper, red onion, cilantro, jalapeño, lime juice, and cumin.
  6. Add salt to taste and serve fresh or chilled.
