Ingredients

- 1/2 whole pineapple, sliced into 1-inch thick rings
- 1/2 cup red bell pepper, seeded and diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 jalapeño pepper, seeded and minced
- Juice of 1 large lime
- 1 teaspoon ground cumin
- Salt to taste
Instructions
- Preheat your grill or grill pan to medium-high heat, lightly oiling the grates.
- Grill the pineapple slices for about 4 to 5 minutes on each side until grill marks appear.
- Remove grilled pineapple and chill in the refrigerator.
- After 10-15 minutes, chop the cooled pineapple into 1/4-inch pieces.
- In a bowl, mix pineapple with red bell pepper, red onion, cilantro, jalapeño, lime juice, and cumin.
- Add salt to taste and serve fresh or chilled.
Notes
For the best flavor, use fresh ingredients and chill the grilled pineapple before mixing.
