A nostalgic and nutritious veggie burger packed with black beans and sunflower seeds, perfect for BBQs and family dinners.
Ingredients

- 1/2 cup sunflower seeds or pepitas
- 1 tsp coriander seeds
- 1/4 tsp fennel seeds (optional)
- 2 tsp oil (avocado or olive)
- 1.5 cups chopped onion (white or red)
- 1 hot green chile (finely chopped)
- 1/2 tsp smoked paprika
- 1.5 tsp Old Bay seasoning
- 1/2 tsp garlic powder
- 3/4 cup cooked brown or white rice
- 1 (15 oz) can black beans (drained)
- 1/2 tsp salt
- 2 to 3 tbsp BBQ sauce
- 1.5 tbsp flax seed meal
- 1/4 cup breadcrumbs (gluten-free if needed)
Instructions
- Toast the sunflower seeds in a skillet over medium heat for about 2 minutes until fragrant.
- Heat oil in a skillet, sauté onions, green chile, and salt for 5 minutes.
- Add smoked paprika and cook for an additional 3 minutes.
- In a food processor, blend sunflower seeds, coriander, fennel, and spices until coarse.
- Mix in rice, black beans, sautéed onions, flaxmeal, and BBQ sauce.
- Fold in remaining rice, black beans, and breadcrumbs. Chill for 10 minutes.
- Shape mixture into patties and grill on medium-high heat for 3-5 minutes per side.
- Serve on toasted buns or lettuce wraps with desired toppings.
Notes
Store leftover patties in an airtight container in the fridge for up to 3 days. They freeze well for up to 3 months.
