Ingredients

- Spring salad mix or any salad mix you prefer
- A handful of grape or cherry tomatoes, halved
- 1 shallot, thinly sliced
- Micro greens (optional)
- 1 can (15 oz) chickpeas, drained and rinsed
- Mineral salt and pepper, to taste
- 4 tablespoons tahini
- Juice of one large lemon
- A dash of mineral salt and garlic salt
- A dash of red pepper flakes
- 2–3 tablespoons water or extra lemon juice, as needed
Instructions
- In a small bowl, whisk together tahini, lemon juice, mineral salt, garlic salt, and red pepper flakes.
- Taste and adjust seasoning as necessary.
- Gradually add water or more lemon juice one tablespoon at a time until you reach desired consistency—smooth but not runny.
- In a large bowl, layer your salad base with spring mix, halved tomatoes, sliced shallots, and drained chickpeas.
- Top generously with tahini dressing, ensuring everything is coated evenly.
- Serve immediately.
