  • A dash of red pepper flakes
  • 23 tablespoons water or extra lemon juice, as needed

Instructions

  1. In a small bowl, whisk together tahini, lemon juice, mineral salt, garlic salt, and red pepper flakes.
  2. Taste and adjust seasoning as necessary.
  3. Gradually add water or more lemon juice one tablespoon at a time until you reach desired consistency—smooth but not runny.
  4. In a large bowl, layer your salad base with spring mix, halved tomatoes, sliced shallots, and drained chickpeas.
  5. Top generously with tahini dressing, ensuring everything is coated evenly.
  6. Serve immediately.
