Description

A heartwarming and nourishing Green Broth recipe that combines the flavors of smoked sausage with hearty vegetables and vibrant greens.


Ingredients

Scale
  • 1 pound smoked cured sausage (calabresa, paio, chouico, linguica, Spanish chorizo, Kielbasa, or plant-based sausage)
  • 1/8 cup olive oil
  • 1 onion, chopped
  • 3 cloves garlic, roughly chopped
  • 8 cups chicken stock or veggie broth
  • 2 pounds yellow potatoes, cut in chunks
  • 1 to 1 1/2 teaspoons salt
  • 3/4 teaspoon pepper
  • 2 cups collard greens or kale, cut into thin ribbons
  • Optional: 2 to 3 tablespoons lemon juice and zest of a lemon

Instructions

  1. Prepare the Greens: Cut the stems out of the collard greens (or kale) and slice them into thin ribbons. Set them aside.
  2. Brown the Sausage: In a heavy-bottom stock pot, heat olive oil over medium-high heat. Add the sausage and sauté until nicely browned, about 5-7 minutes. Remove and let rest.
  3. Sauté Onion & Garlic: In the same pot, reduce heat to medium, and add the chopped onion and garlic. Sauté until softened, about 3-4 minutes.
  4. Add Broth & Potatoes: Pour in the chicken stock (or veggie broth), add the potato chunks, and sprinkle in the salt. Bring to a boil, then reduce to simmer for about 15-20 minutes.
  5. Blend the Broth: Add roughly one-third of the sausage back into the soup and blend until mostly smooth, retaining some chunks for texture.
  6. Incorporate the Greens: Stir in the collard greens (or kale) and simmer for about 10 minutes, until tender.
  7. Return Sausage & Warm Through: Bring the remaining sausage back to the pot and warm it through. Adjust consistency with additional broth or water if necessary.
  8. Adjust Seasoning: Taste the broth and adjust salt and pepper as needed. Add lemon juice and zest if desired.
  9. Serve & Enjoy: Drizzle with olive oil and ladle the broth into bowls. Garnish with fresh herbs if desired.

Notes

Leftovers can be stored in the fridge for up to four days. It tastes even better the next day, allowing flavors to meld.
