Ingredients
Scale
- 1 (14-ounce) block of extra firm tofu
- 2 1/2 tablespoons white miso paste
- 1/3 cup apple cider vinegar
- 1/4 cup lemon juice
- 2 tablespoons extra virgin olive oil
- 4 garlic cloves, crushed
- 2 tablespoons nutritional yeast
- 1 tablespoon dried oregano
- 1/2 teaspoon onion powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Drain the tofu and slice it vertically into four even slabs.
- Press the tofu for at least 30 minutes using paper towels and a heavy object.
- Once pressed, cut the tofu into small cubes.
- In a medium bowl, whisk together miso, apple cider vinegar, lemon juice, olive oil, garlic, nutritional yeast, oregano, onion powder, salt, black pepper, and red pepper flakes.
- Gently add the tofu cubes into the marinade, mixing carefully.
- Transfer the mixture to an airtight container and refrigerate for at least 12 hours.

Notes
For the best flavor, allow the feta to marinate for 24-48 hours. Store in an airtight container and keep submerged in the marinade for freshness.
