- 1 cup gluten-free oats
- 1 cup gluten-free all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup coconut oil or dairy-free butter, softened
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1 large egg or 1 flax egg
- 1/2 cup raisins or chopped dates
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, stir together the gluten-free oats, gluten-free flour, baking soda, and salt until evenly combined. Set aside.
- In a separate large bowl, cream the softened coconut oil (or dairy-free butter) with the brown sugar until smooth and slightly fluffy.
- Add the maple syrup (or honey), vanilla extract, and egg (or flax egg) into the wet mixture. Mix until well combined.
- Gradually add the dry ingredients into the wet mixture in two additions, stirring gently until a cohesive dough forms.
- Add in the raisins or dates, folding them gently until evenly distributed throughout the dough.
- Use a spoon or cookie scoop to drop rounded tablespoons of dough onto the prepared baking sheet, ensuring they’re about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden and slightly crisp but the centers still appear soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For chocolate chip variations, simply swap raisins for gluten-free chocolate chips. Store them in an airtight container for up to 4 days at room temperature or freeze for longer storage.
