Ingredients

- 2 cups rolled oats
- 2 cups milk (dairy or non-dairy)
- 1/4 cup maple syrup or honey
- 1/2 cup molasses
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
- 1/4 cup brown sugar
- 1/4 cup melted butter or coconut oil
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9 baking dish.
- In a large bowl, combine rolled oats, milk, maple syrup, molasses, ground ginger, ground cinnamon, ground nutmeg, baking powder, and salt. Mix well.
- Transfer the oatmeal mixture into the prepared baking dish and smooth out the top.
- In another bowl, mix the chopped walnuts, brown sugar, and melted butter (or coconut oil) until crumbly.
- Sprinkle the walnut mixture over the oatmeal mixture.
- Bake for 30-35 minutes until set and golden brown.
- Allow to cool slightly, then slice and serve.
Notes
For best results, allow butter to soften at room temperature before use. This recipe can be made ahead of time and stored for up to 5 days in the refrigerator.
