A colorful medley of pickled vegetables that adds a burst of flavor to any meal.
Ingredients

- 1 cup red bell pepper, chopped in chunks
- 1 cup carrots, cut in chunks
- 1 rib celery, cut in one-inch chunks
- 1 cup fennel bulb, chopped (or substitute with more celery)
- 2 to 6 chili peppers (serrano, jalapeños, or any spicy pepper)
- 1 cup cauliflower florets
- 4 cloves garlic, thinly sliced or slivered
- 1/2 cup (5 ounces) kosher salt (or mineral salt)
- Filtered water
- 1 cup white wine vinegar (or white vinegar)
- 1/2 cup filtered water
- 1/2 cup olive oil
- 1 tablespoon dried oregano
- 1 teaspoon red pepper flakes
- 1/2 teaspoon celery seeds
- 1/2 teaspoon fennel seeds, crushed
- 2 bay leaves
- 1/2 teaspoon black peppercorns, whole or coarsely ground
- 1 teaspoon sugar (optional)
- Optional Additions: Green olives, juniper berries, or fresh green beans for extra flavor!
Instructions
- Prep the Veggies: Start by chopping your veggies into bite-sized pieces.
- Salting Time: Mix all your chopped vegetables with the kosher salt and cover with filtered water.
- Submersion: Place a small plate inside the bowl to keep the veggies submerged and let sit at room temperature for 24 to 48 hours.
- Rinsing: After soaking, rinse the vegetables thoroughly in a colander with cool water.
- Drain & Mix: Allow them to drain completely and transfer to a bowl. Add in the white wine vinegar, filtered water, olive oil, dried oregano, and all the other spices.
- Combine & Pack: Mix everything well and transfer to a jar that seals tightly.
- Refrigeration: Seal the jar and refrigerate for at least 3 days before enjoying.
- Enjoy: Once the waiting is over, savor the vibrant flavors of your homemade Giardiniera!
