Description
Delightful and guilt-free blondies made with white beans, offering a rich fudge-like texture without refined sugars.
Ingredients
Scale
- 15-ounce can of cannellini beans, drained (or 1.5 cups cooked white beans)
- 1/4 cup maple syrup
- 2 to 3 tablespoons brown sugar
- 2 tablespoons oil (or melted vegan butter)
- 1 1/2 teaspoons vanilla extract
- 2 tablespoons tahini (or a smooth nut butter)
- 1/4 cup flour (all-purpose, spelt, oat, or gluten-free blend)
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 2 to 3 tablespoons dark or semi-sweet chocolate chips
- 2 tablespoons white chocolate chips (optional)
Instructions
- Prepare Your Pan: Line an 8×8 or 9×9 inch brownie pan with parchment paper and preheat your oven to 350°F (175°C).
- Blend the Base: In a food processor or high-speed blender, add the drained white beans, maple syrup, brown sugar, tahini, oil, and vanilla. Blend until smooth (about 1-2 minutes).
- Mix in the Dry Ingredients: Add flour, baking powder, and salt, then pulse until just combined.
- Add the Chocolate: Pour the batter into the lined pan, fold in chocolate chips, and spread evenly.
- Bake: Bake for 20-25 minutes, checking for a toothpick to come out clean with a few moist crumbs.
- Cool and Slice: Allow to cool in the pan for 10 minutes before transferring to a wire rack and cool completely before slicing.
Notes
Ensure beans are well drained for the right consistency. Use room temperature ingredients for best results.
