Ingredients

  • 1 ¼ cup all-purpose flour
  • ¾ cup granulated sugar (adjust for sweetness)
  • ¼ tsp baking powder
  • ¼ tsp kosher salt
  • 3.5 oz unsalted butter (room temperature, cut into 1” chunks)
  • 1 large egg
  • 1 tsp vanilla extract
  • ⅓ cup whipping cream
  • 1 8-oz brick cream cheese (room temperature)
  • ⅓ cup granulated sugar
  • ½ tsp vanilla extract
  • 1 tsp lemon juice (optional)
  • 2 cups mixed fresh fruit (strawberries, blueberries, bananas, peaches)

Instructions

  1. Mix dry ingredients: In a stand mixer, combine flour, sugar, baking powder, and salt. Beat on low speed to combine.
  2. Incorporate butter: Add unsalted butter and beat on low until crumbly.
  3. Add egg and vanilla: Beat until smooth dough forms.
  4. Shape the dough: Form into a disc, chill for 30 minutes.
  5. Roll out the dough into a 10” circle, transfer to a lined baking sheet, and chill.
  6. Bake for about 12 minutes or until golden. Let cool.
  7. Prepare cream topping: Whip cream to firm peaks.
  8. Beat cream cheese, sugar, and vanilla until fluffy.
  9. Combine the whipped cream with the cream cheese.
  10. Spread cream over the cooled crust.
  11. Top with mixed fresh fruit just before serving.
  12. Slice and serve!

Notes

For best results, use ingredients at room temperature. Store leftovers in an airtight container for up to 3 days.
