- 1 ¼ cup all-purpose flour
- ¾ cup granulated sugar (adjust for sweetness)
- ¼ tsp baking powder
- ¼ tsp kosher salt
- 3.5 oz unsalted butter (room temperature, cut into 1” chunks)
- 1 large egg
- 1 tsp vanilla extract
- ⅓ cup whipping cream
- 1 8-oz brick cream cheese (room temperature)
- ⅓ cup granulated sugar
- ½ tsp vanilla extract
- 1 tsp lemon juice (optional)
- 2 cups mixed fresh fruit (strawberries, blueberries, bananas, peaches)
Instructions
- Mix dry ingredients: In a stand mixer, combine flour, sugar, baking powder, and salt. Beat on low speed to combine.
- Incorporate butter: Add unsalted butter and beat on low until crumbly.
- Add egg and vanilla: Beat until smooth dough forms.
- Shape the dough: Form into a disc, chill for 30 minutes.
- Roll out the dough into a 10” circle, transfer to a lined baking sheet, and chill.
- Bake for about 12 minutes or until golden. Let cool.
- Prepare cream topping: Whip cream to firm peaks.
- Beat cream cheese, sugar, and vanilla until fluffy.
- Combine the whipped cream with the cream cheese.
- Spread cream over the cooled crust.
- Top with mixed fresh fruit just before serving.
- Slice and serve!
Notes
For best results, use ingredients at room temperature. Store leftovers in an airtight container for up to 3 days.
