Description
A delicious twist on the classic French onion soup, this one-skillet lasagna combines caramelized onions, mushrooms, and creamy layers for an indulgent comfort meal.

- 1 yellow onion, thinly sliced
- 2 Tbsp vegan butter
- 2 cloves garlic, minced
- ½ tsp dried thyme
- ¼ tsp salt
- ⅛ tsp black pepper
- 1 ½ Tbsp balsamic vinegar (or 2–3 Tbsp red wine)
- ½ – 1 cup mushrooms, thinly sliced
- ½ cup raw cashews, soaked for at least 20 minutes
- 1 cup broth (vegetable or mushroom recommended)
- 2 tsp lemon juice
- 2 Tbsp nutritional yeast
- 1 tsp Italian seasoning
- 1 tsp miso
- 5 lasagna pasta sheets, broken into pieces
- 1–2 cups spinach, firmly packed
- 2 cups broth (or water)
- Red pepper flakes (optional for serving)
Instructions
- Heat a skillet over medium heat. Add vegan butter, then toss in the onion and cook until translucent (about 8 minutes).
- Add garlic, thyme, salt, and pepper. Cook for another 2-3 minutes until golden.
- Pour in balsamic vinegar or red wine, stir, and cook until caramelized (about 5-7 minutes). Reserve ¾ of the mixture for garnish.
- Add mushrooms to the remaining onion mixture and cook for 1-2 minutes until softened.
- In a blender, combine soaked cashews, 1 cup broth, lemon juice, nutritional yeast, Italian seasoning, miso, and salt. Blend until smooth.
- Pour the white sauce into the skillet and mix well.
- Add broken lasagna pieces and 2 cups of broth, pressing down to submerge the pasta.
- Cover and simmer for 12-15 minutes, stirring halfway to prevent sticking. Adjust liquid if necessary.
- Stir in spinach and let it sit for 3 minutes to wilt.
- Top with reserved caramelized onion mixture and sprinkle with red pepper flakes if desired. Serve warm.
Notes
Use fresh ingredients for better flavor. You can substitute cashews with silken tofu or white beans if nuts are a concern.
