- 4 salmon fillets (5 to 6 oz each, skin on or off)
- 1½ tbsp olive oil
- 1¼ tsp kosher salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- ½ tsp smoked paprika
- 3 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 2 tbsp finely chopped fresh dill and/or parsley
- ⅛ tsp kosher salt
Instructions
- Preheat the grill: Heat your grill to medium-high, around 375°F to 400°F.
- Prepare the salmon: Pat each salmon fillet dry with a paper towel and brush generously with olive oil.
- Season the fillets: In a small bowl, mix kosher salt, black pepper, garlic powder, and smoked paprika, then sprinkle over each fillet.
- Grill skin-on fillets: Place them skin-side down for 5-6 minutes until cooked ⅔ of the way up the sides.
- Grill skinless fillets: Cook for about 4-5 minutes per side, being gentle when flipping.
- Make the herb drizzle (optional): Whisk together extra virgin olive oil, lemon juice, lemon zest, and chopped herbs.
- Check for doneness: The salmon should flake easily and reach an internal temperature of 145°F.
- Serve and enjoy: Remove from the grill, drizzle with herb mixture if using, and serve warm.

Let the salmon sit at room temperature for about 15-20 minutes before grilling for even cooking.
