Ingredients

  • 4 salmon fillets (5 to 6 oz each, skin on or off)
  • 1½ tbsp olive oil
  • 1¼ tsp kosher salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp finely chopped fresh dill and/or parsley
  • ⅛ tsp kosher salt

Instructions

  1. Preheat the grill: Heat your grill to medium-high, around 375°F to 400°F.
  2. Prepare the salmon: Pat each salmon fillet dry with a paper towel and brush generously with olive oil.
  3. Season the fillets: In a small bowl, mix kosher salt, black pepper, garlic powder, and smoked paprika, then sprinkle over each fillet.
  4. Grill skin-on fillets: Place them skin-side down for 5-6 minutes until cooked ⅔ of the way up the sides.
  5. Grill skinless fillets: Cook for about 4-5 minutes per side, being gentle when flipping.
  6. Make the herb drizzle (optional): Whisk together extra virgin olive oil, lemon juice, lemon zest, and chopped herbs.
  7. Check for doneness: The salmon should flake easily and reach an internal temperature of 145°F.
  8. Serve and enjoy: Remove from the grill, drizzle with herb mixture if using, and serve warm.
