Ingredients

- 2 cups pistachios, shelled and unsalted
- 1 cup sugar
- 6 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup unsweetened cocoa powder
- 1 cup heavy cream
- 8 ounces dark chocolate, chopped
- 1 tablespoon unsalted butter
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
- In a food processor, finely grind the pistachios until they resemble coarse sand.
- In a large bowl, whisk together the ground pistachios, sugar, eggs, vanilla extract, salt, and cocoa powder until fully combined.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake in the preheated oven for 25-30 minutes until set in the center.
- Allow the cake to cool in the pan for about 10 minutes, then invert onto a serving plate.
- In a saucepan, bring the heavy cream to a simmer, then pour it over the chopped dark chocolate and let sit for a minute.
- Stir gently until smooth, then incorporate the butter.
- Pour the ganache over the cooled cake and let it set at room temperature for 30 minutes.
- Slice, serve, and enjoy!
Notes
For a dairy-free version, substitute butter in the ganache with coconut oil. Add a pinch of sea salt for a salted caramel flavor.
