Ingredients

  • 2 cups pistachios, shelled and unsalted
  • 1 cup sugar
  • 6 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped
  • 1 tablespoon unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a food processor, finely grind the pistachios until they resemble coarse sand.
  3. In a large bowl, whisk together the ground pistachios, sugar, eggs, vanilla extract, salt, and cocoa powder until fully combined.
  4. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  5. Bake in the preheated oven for 25-30 minutes until set in the center.
  6. Allow the cake to cool in the pan for about 10 minutes, then invert onto a serving plate.
  7. In a saucepan, bring the heavy cream to a simmer, then pour it over the chopped dark chocolate and let sit for a minute.
  8. Stir gently until smooth, then incorporate the butter.
  9. Pour the ganache over the cooled cake and let it set at room temperature for 30 minutes.
  10. Slice, serve, and enjoy!

Notes

For a dairy-free version, substitute butter in the ganache with coconut oil. Add a pinch of sea salt for a salted caramel flavor.
