Ingredients

  • 16 ounces super firm tofu, well-pressed
  • 4 tablespoons cornstarch
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons avocado oil
  • 5 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 teaspoon oregano
  • 1/2 teaspoon red chili flakes
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup vegetable broth
  • 1 tablespoon tomato paste
  • 1 cup cashew cream
  • 2 cups baby spinach, chopped
  • 45 fresh basil leaves, chopped
  • 1/2 cup vegan parmesan (optional)

Instructions

  1. Prepare the Tofu: Press tofu for 20 minutes and cut into bite-sized pieces.
  2. Coat the Tofu: Mix cornstarch, nutritional yeast, salt, and pepper in a bowl. Toss tofu until evenly coated.
  3. Fry the Tofu: Heat oil in a skillet over medium-high heat. Fry tofu for 3–4 minutes on each side until golden. Remove and set aside.
  4. Sauté Aromatics: In the same skillet, sauté garlic until fragrant, about 30 seconds.
  5. Create the Sauce: Add sun-dried tomatoes, oregano, chili flakes, salt, and pepper. Cook for one minute.
  6. Simmer: Pour in vegetable broth, and stir in tomato paste and cashew cream. Cook until sauce thickens, about 5 to 7 minutes. Add spinach and let wilt.
  7. Combine: Stir in basil and vegan parmesan if using. Toss in crispy tofu and coat with sauce.
  8. Serve & Enjoy: Serve over pasta, rice, or with crusty bread.

Notes

For super crispy tofu, freeze and press beforehand. Store leftovers in the refrigerator for up to 4 days.
