A comforting and flavorful plant-based dish featuring crispy tofu and a rich, creamy tomato sauce.

- 16 ounces super firm tofu, well-pressed
- 4 tablespoons cornstarch
- 2 tablespoons nutritional yeast
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3 tablespoons avocado oil
- 5 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 teaspoon oregano
- 1/2 teaspoon red chili flakes
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup vegetable broth
- 1 tablespoon tomato paste
- 1 cup cashew cream
- 2 cups baby spinach, chopped
- 4–5 fresh basil leaves, chopped
- 1/2 cup vegan parmesan (optional)
Instructions
- Prepare the Tofu: Press tofu for 20 minutes and cut into bite-sized pieces.
- Coat the Tofu: Mix cornstarch, nutritional yeast, salt, and pepper in a bowl. Toss tofu until evenly coated.
- Fry the Tofu: Heat oil in a skillet over medium-high heat. Fry tofu for 3–4 minutes on each side until golden. Remove and set aside.
- Sauté Aromatics: In the same skillet, sauté garlic until fragrant, about 30 seconds.
- Create the Sauce: Add sun-dried tomatoes, oregano, chili flakes, salt, and pepper. Cook for one minute.
- Simmer: Pour in vegetable broth, and stir in tomato paste and cashew cream. Cook until sauce thickens, about 5 to 7 minutes. Add spinach and let wilt.
- Combine: Stir in basil and vegan parmesan if using. Toss in crispy tofu and coat with sauce.
- Serve & Enjoy: Serve over pasta, rice, or with crusty bread.
Notes
For super crispy tofu, freeze and press beforehand. Store leftovers in the refrigerator for up to 4 days.
